Roasted Cauliflower

Sometimes when I’m on a junk food binge, I make excuses that I have no time for healthy cooking. This cauliflower looks sooo delish, I bet my kids would gobble it up! NO excuses tonight. I’m picking up a head of cauliflower on the way home from Starbucks tonight.
Preheat oven to 350.
Use a non-stick baking pan with sides. Pull apart the cauliflower and break into desired pieces. Sprinkle with olive oil and season with salt and pepper. Bake in the oven for 35 to 45 minutes or until golden brown. Remove and let cool.

…”Stunned by the sight I kept looking for more anomalies and found one or more at almost every stand of the market, peppers, cucumbers, tomatoes, carrots, lemons, all with very unusual features and shapes. I took my finds home and started photographing them. That day I got hooked on collecting vegetable and fruit mutations and the Idea for the Mutato-Archive was born.
Produce has become a highly designed, monotonous product. We have forgotten, and in many cases never experienced, the way fruits, roots, and vegetables can actually look (and taste). The Mutato-Project serves to document, preserve and promote these last remainders of agricultural diversity.”
This is seriously amazing! I wonder how often farmers find and throw our morphological irregularities??
