No-Bake Chocolate Chip Coconut Cookies

1 1/2 cup butter, room temperature
3 cups quick cooking oats
6 oz. chocolate chips
3 1/3 cups powdered sugar
1 1/2 cups shredded coconut
1 tsp. vanilla
sanding sugar
* Mix all ingredients in a large bowl by hand. Form into small balls and roll in sanding sugar. Keep refrigerated.

I just made these, and halfway through realized that I was out of vanilla extract. And my daughter was napping, so there was no way I was going to the store…so I used almond extract instead. And they taste JUST like Almond Joys! OMG, I’m in love!
