Pink Chocolate Chip Cookies

There is nothing like a super chocolate-y chocolate chip cookie! So simple & so delicious. Next time try adding some red gel food coloring. PINK cookies are definitely more fun. & wouldn’t they be super cute for your next event?
Ingredients
1/2 cup (1 stick) butter, slightly softened
1 (17.5 oz.) pouch Betty Crocker sugar cookie mix
1/2 cup powdered sugar
1/2 cup flour
2 egg WHITES (do not use whole egg or the yolk will turn cookies orange)
red food coloring (about 12-14 drops, or until desired pink color is achieved)
1 cup baking chips (dark chocolate, semi-sweet chocolate, milk chocolate, white chocolate or candy pieces like M&Ms)
Directions
1. Preheat oven to 375 degrees (F).
2. Cream butter and cookie mix. Add powdered sugar and flour and mix until well blended and crumbs are fine. Add egg whites and mix until well blended and mixture sticks together. Add red food coloring, several drops at a time, mixing after each addition until desired pink color is achieved and is uniform throughout the dough. Stir in chocolate pieces.
3. With a 1-1/4″ cookie scoop (or by rounded spoonful), drop cookies onto ungreased cookie sheet. Bake for 10 minutes, or until set but not brown. Allow to cool on cookie sheet for 2 minutes before removing cookies to cooling rack to cool completely.

Raw Cookie Dough Bites

I admit, I usually fill up on raw cookie dough before the cookies are even ready. So, finally a recipe where the raw dough is the finished product!
INGREDIENTS
1/2 cup creamy raw almond butter or peanut butter
1/4 cup, plus 1 tbsp raw honey or maple syrup
1/2 tsp vanilla extract
1/4 cup, plus 1 tbsp coconut flour
3 tbsp ground flax seed
1/4 tsp sea salt
1/4 cup dark chocolate chips or carob chips
In a large bowl, mix together the nut butter, honey (or maple syrup) and vanilla until creamy and well blended. In a separate bowl, combine the coconut flour, ground flax seed and sea salt. Add the dry ingredients to the wet and mix well to combine. Use your hands to knead the dough. If the dough is too wet, add a bit more coconut flour. If it’s too dry and doesn’t hold together well, knead in one teaspoon of water. Fold in the dark chocolate chips or carob chips. Scoop out tablespoon-size portions and roll into one-inch balls using your hands to create a bite-sized treat.
*Refrigerate truffles for 30 minutes before serving. Makes about 18 cookie bites.

I was browsing through Etsy Finds this afternoon and saw these beautiful initialed (what I initially thought were jewelry storage containers)….when I clicked to see more I learned that they are COOKIES! Quite possibly the most beautiful cookies? These particular ones are Orange Vanilla Spice flavor & have a gold bead border that give them a pretty vintage look.
